In 2024, I embarked on my epic health journey—success? Absolutely, I’d say so lol! Did the scale budge even a little? HA! Not a chance! I kicked off the year by swapping in healthier alternatives instead of going full diet dictator. Whole wheat flour became my bestie because, surprise surprise, I love bread. Spoiler: I can’t live without it! I won’t lie; I’d happily munch on bread alone—yep, that’s how devoted I am to my carb-filled love affair! 😂🍞
The recipe I’m about to share with you is a personal favorite of mine, one that I cherish and use often; there’s nothing quite like having warm, homemade bread on hand to elevate a variety of meals and make every occasion feel special.

What You’ll Need
- 600g whole wheat flour or 4 ¾ cups
- 10g yeast or 1 tbsp
- 20g sugar or 2 tbsp
- 5g salt or 1 tsp
- 50g butter or 3 ½ tbsp
- 225g coconut milk or 1 cup
- 225g warm water or 1 cup
- Seeds of choice (I used black and white sesame seeds)

How To Make It
- Set aside 50g or ¾ cups of flour, it helps when dough becomes too sticky
- Combine yeast, sugar and liquid (coconut milk and water combined) in a mixing bowl
- Add flour then salt and mix salt to incorporate into flour
- Mix/knead using a mixer or by hand then add butter
- Mixture will be soft and sticky, add remaining flour in stages to help with mixing
- Test dough, if you cannot form a windowpane, it needs more time (see video)
- Mixing can take anywhere between 10-15 minutes depending on your mixer or kneading technique. Don’t rush bread takes times.
- If mixture is still sticky, add 1tbsp of flour to help.
- Once dough is ready, remove from mixing bowl and divide into 100g pieces.
- Once divided, roll dough into balls, do not flour surface.
- Add rolled dough to baking tray lined with parchment paper.
- Gently press balls to flatten, when it bakes it will puff up perfectly.
- Rest dough for 30-45 mins, dough will double in size
- Once rested, brush tops and sides of dough with water, sprinkle with your favourite toppings like chia seeds or everything seasoning.
- Bake in oven for 30-40 mins at 350F, check for doneness after 25min. additional time may be needed for browning (depending on oven)
- Once baked, enjoy your bread.
Things to Note
- This bread does not taste like coconuts, if you do not like coconut milk, you can substitute with regular milk.
- When dough is ready, it will be tacky NOT sticky. If you touch does and it sticks to your hand it is NOT ready.
- When rolling dough on surface, do not add flour. Adding flour will prevent your dough from rolling properly.
- If you have a preference with toppings, experiment, use seeds or toppings of choice. Chia seeds, sesame seeds, everything seasonings all work. Find the one you like enjoy!
