In case you were wondering I love strawberries. I am a berry girl so it’s only natural I make different things with strawberries. I have to be honest, most of the time my strawberries don’t last long enough to make anything with, but on the rare occasion, when they do, I tend to turn them into something yummy; like a loaf cake or like the strawberry jam I am about to share with you.
It is really a quick and easy recipe that doesn’t require any fancy equipment, just a simple pot, a wooden spoon ( a spatula works, honestly use what you have), and 3 ingredients that can be found in your pantry. I have to say that this recipe is a base recipe meaning if you wanted to add your own spice flavour i.e. cinnamon, vanilla, basil, etc you can for an added flavour boost. With that being said, let’s get into this yummy recipe.

What You’ll Need
- 256g Fresh strawberries
- 50-60g sugar (see note)
- 50g Lemon juice (juice of 1 lemon)
- 5g lemon zest (zest of 1 lemon)
How To Make It
- Combine all ingredients in a pot
- Stir and cook on medium heat
- The mixture will bubble, stir occasionally. Use the back of a spoon to crush strawberry chunks as you stir
- As the mixture cooks, it will thicken, once that occurs remove it from the heat.
- Once removed from heat, use an immersion blender to break chunks into smaller pieces (this is a personal preference)

Things To Note
- The sugar content is really to taste. The strawberries I used were on the sour side so I used 60g of sugar. This also helped to balance the tartness of the lemon juice and zest that was added.
- To keep the sugar content the same just increase your strawberry amount.
- While cooking, use the back of your spoon to squash the strawberry chunks. Like I said before I used an immersion blender since I did not want chunks in my jam. Chunks are fine they need love too.
- I kept my jam in the fridge for about 3-4 weeks with no issues, I didn’t eat it daily but as it sat in the fridge the flavour intensified (my opinion)
I love eating this homemade jam on a slice of my homemade brioche bread toast or my homemade sandwich bread. It is a very refreshing jam and great use of excess strawberries around the home.
